Quakers (Caramel-Oatmeal Cookies)

Cream
2 cups dark brown sugar
1 cup butter or margarine

Add
2 eggs
1½ teaspoon baking soda
1 teaspoon salt
Beat.

Beat in
2 cups flour
2 teaspoon vanilla
3 cups quick oats

Drop by spoonfuls onto ungreased cookie sheet. Bake at 375° for about 9 minutes (for a 2" or 2½" cookie). Do not overbake; they should be soft and chewy, not crisp. If desired, add chocolate chips or nuts.

  4. This sounds so yummy we are going to try this right now. It's perfect weather for cookie making as the snow gently falls around our Colorado home.
